
Uzbek beef shurpa
Description
The recipe won't take much time. There are countless different recipes for shurpa available online. I suggest a fairly simple yet delicious version that you can easily prepare at home without any problems or high expenses. Uzbek shurpa made from beef is cooked in a kazan with a special type of peas, which should be soaked overnight. Potatoes are cut into large pieces. If the potatoes are small, you can cook them whole. For spices, I recommend using cumin, bay leaf, and fresh herbs. Serve hot.

Prepare all the necessary ingredients.

Slice the onion into half-rings.

Heat oil in a cauldron and sauté the onion until it becomes semi-transparent.

Add the meat, cut into fairly large pieces, to the onion and sauté, stirring. Then add the carrot, sliced into rounds.

Salt the meat. Then pour 5-6 glasses of water over the meat and add the peas.

After the water comes to a boil, remove the foam that forms, reduce the heat to low, and simmer for an hour.

Peel the potatoes, cut them into large pieces (you can soak them in water), peel the tomatoes and cut them into 4 parts. Peel the garlic. Finely chop the bell pepper.

When the peas are half cooked, add the potatoes and peppers to the pot and cook until done.

10 minutes before the dish is fully cooked, add tomatoes, bay leaf, and onion cut into half-rings.

Serve shurpa in deep soup plates, sprinkled with herbs, with flatbreads or bread.
