Description

Cooking duck properly is essential, as its meat will be delicious and tender only if prepared correctly—and this simple wok duck recipe makes the task easy. Every ingredient has its place here, so by following the instructions, you'll end up with an excellent dish. Duck cooked in a wok at home will turn out just as good as in an expensive restaurant, and you'll be amazed by its wonderful flavor. 1) First, thoroughly rinse the duck, cut the bird into 4 pieces, and carefully pat the meat dry with paper towels. 2) Place the wok over high heat and pour in peanut oil. Once the oil is hot, place two duck pieces into the wok, skin-side down, and sear for about three minutes. Then reduce the heat and continue cooking for another 15 minutes, until the skin turns dark brown. Transfer the cooked pieces onto paper towels to drain excess oil. Then cook the remaining duck pieces in the same way, until nicely browned. 3) Next, pour out the oil from the wok and wipe the wok clean with paper towels. Pour in chicken broth, soy sauce, wine, and sugar, then add star anise and cinnamon. Place the wok over heat and bring the broth to a boil. Add the duck pieces, cover the wok with a lid, and simmer slowly for one hour, skimming off foam occasionally. 4) When the duck is almost done, prepare the sauce by mixing apricot jam, apricot liqueur, apple cider vinegar, and tomato sauce in a bowl. Whisk everything thoroughly with a whisk until smooth. 5) Using a slotted spoon, remove the cooked duck from the wok and place it onto serving plates. Pour the prepared sauce over the meat and sprinkle with fresh cilantro. Serve immediately. Enjoy your meal!
