Description

The recipe won't take much time. The duck turns out extremely juicy with my method. It doesn't dry out on the outside, even with such a long cooking time. This duck is perfect for serving at a festive table, enough for a large group, and everyone will be delighted. Serve hot.

    Prepare all the necessary ingredients. Calculate the amount of dough based on the size of the duck.

    Rinse the duck thoroughly and remove any remaining feathers. Rub the duck with salt, pepper, and finely chopped garlic cloves. Place the duck in the refrigerator for at least 2 hours, or preferably overnight.

    Meanwhile, prepare a simple yeast-free dough. Put flour into a large bowl and make a well in the center. Break the eggs into the well, add a pinch of salt. Pour in the water and mix thoroughly. Knead the dough, adding more flour if necessary.

    The dough should be soft but not sticky to the hands.

    Cut the apples into small slices.

    Take the duck out of the refrigerator. Stuff it with apple slices; you can also add a few slices of lemon. You can sew up the skin or secure it with toothpicks to prevent the filling from falling out, or leave it as is, since the filling won't have anywhere to go once it's in the dough.

    Roll out the dough into a large sheet 1.5 cm thick. Place the duck in the center, fold the dough over and seal the edges. Transfer the duck in the dough onto a baking sheet lined with parchment paper and put it in an oven preheated to 180°C (350°F) for 15 minutes. Then reduce the temperature to 150–160°C (300–320°F) and continue baking for 2 hours. When the dough turns golden brown, carefully cut off the top with a knife and return the duck to the oven so the top can brown nicely. Do not remove the bottom part of the dough, as it will have collected all the juices!

    The duck in dough is ready! I suggest serving it in the same bread bowl in which it was baked. My family especially loves the dough soaked with the duck's fat.
