Instructions
- 1
Step 1

Prepare the listed ingredients. Thoroughly clean the bird carcass from any remaining feathers, and remove the gland from the tail end.
- 2
Step 2

Mix flower honey of any variety and mustard in a small container, but not grain mustard, otherwise it will burn. Use regular store-bought mustard, not powder, but a ready-made, diluted product.
- 3
Step 3

Rinse the duck carcass thoroughly in water and dry with paper towels. Add salt and ground black pepper, then rub the spices into the carcass with slight pressure.
- 4
Step 4

Place the honey and mustard mixture on it, rub it in both outside and inside. Let the bird marinate in this mixture for at least 2 hours at room temperature, or up to 4-5 hours.

Step 5

Then preheat the oven to 200 degrees and place the duck into a roasting bag. Roast the duck for as many hours as it weighs in kilograms. For example, a 2 kg bird will roast for 2 hours. About 10 minutes before the end of cooking, cut open the top of the bag and brown the duck, being careful not to spill the rendered fat.

Step 6

Serve the duck in mustard-honey sauce hot.
