
Duck in mulled wine marinade

Rinse the duck meat, pat dry, season with salt and pepper, and sprinkle with crushed fresh thyme.

Prepare the remaining ingredients.

Pour the wine into a saucepan, add all the other ingredients for mulled wine. Heat to 80°C, then cool to room temperature.

Pour the duck meat with cooled mulled wine, let it marinate for several hours, or overnight.

Place the marinated meat into a baking dish and pour the strained marinade over it. Bake in the oven at 180 °C for 1.5 hours. Turn the meat a couple of times, basting it with the marinade.
