
Duck in the oven with potatoes
Description
This recipe can also be used for baking a whole duck, but then you'll need more time for baking and additional ingredients. The dish is perfect for a family celebration and can easily feed a large crowd. The duck turns out with a golden crispy crust, hiding tender meat underneath.

Step 1

Rinse the duck under running water, clean it, and pat dry with paper towels. Season the legs with salt and pepper to taste, then sear over medium heat. Since my duck is fatty, I didn't add extra oil. Sear the duck on all sides until a golden crust forms.

Wash and peel the vegetables. Finely chop the onion, and cut the potatoes and carrots into large pieces. Remove the duck from the skillet and add the vegetables.

Place the duck legs in a baking dish. Also sauté the vegetables until half-cooked, but the onion should become translucent.

Spread the sautéed vegetables over the duck. Season the vegetables with salt at this stage.

Add the broth to the dish and bake in a preheated oven for 40 minutes until done at 190 degrees.
