
Duck stewed with potatoes in a cauldron

The dish is prepared without unnecessary complications. Duck meat is quite delicious when cooked properly. Sometimes you buy a duck to roast, only to find it tough. This has happened to me more than once. To avoid unnecessary risks, lately I've been cooking stewed duck more often. Duck stewed in a cauldron turns out especially tasty. And if you cook it over an open fire outdoors, the dish will be hearty, delicious, and absolutely successful. You can also stew duck at home on the stove, and it will still taste great. We wash and prepare the duck. If there are many guests, we can use the whole duck. If not, it's better to cook the meatier parts of the bird. We remove the fat from the duck, and make small cuts on the larger pieces, slicing through the skin so that the remaining fat renders out during cooking.

Heat the cauldron and place the pieces of duck meat into it, skin side down.

While the duck is frying, let's peel the vegetables.

Sear the duck pieces on both sides until golden brown, then remove them from the cauldron and place in another dish. Add the pieces of duck fat into the cauldron.

We have a lot of rendered fat, so add the potatoes to it for frying. If you have small potatoes, you can leave them whole; larger ones should be cut into big pieces. Fry the potatoes until they develop a golden-brown crust. Keep the heat under the pot quite high.

Place the fried potatoes next to the duck.

In a cauldron, sauté finely chopped onion, sliced carrots, and pepper cut into strips or rings.

The vegetables are sautéed, now add the minced ginger, salt, and spices. Place the duck on top, then pour in water until it almost covers the duck. Cover the pot with a lid, reduce the heat, and simmer the duck for about 40 minutes. Then add the fried potatoes and garlic, and continue simmering until fully cooked. Sprinkle with fresh herbs, and serve.
