Duck stewed with potatoes
Description
To prepare duck with potatoes using this recipe, a small cauldron is ideal, but you can also use a sauté pan or a pot with thick walls. It should be noted that to keep the potatoes from becoming mushy, they should only be added once the meat is already cooked.

Step 1

Prepare the duck. Rinse it, then cut it into pieces. You can use only the meat, removing it from the bones, but the dish will still be delicious even if you don't. Heat sunflower oil well in a pan suitable for cooking duck with potatoes. Add the duck pieces, and fry for 10–15 minutes until a golden crust forms.

Step 2

While the duck is frying, peel the onion and carrot, cut them into thin strips, then add to the meat and fry together for about 5 minutes. The carrot can be grated. Pour 0.5 cup of hot water into the meat and vegetable mixture, cover with a lid, and simmer over low heat for 30–40 minutes, adding water if necessary. A few minutes before the time is up, add salt to taste.

Step 4

After that, add the potatoes to the meat and pour boiling water over it, making sure the water level is slightly below the level of the meat and vegetables. Continue simmering the dish over low heat for another 15–20 minutes. It's better not to stir it during this time, so the potatoes don't fall apart and remain in nice pieces.
