
Duck with apples and cabbage
Description
The dish is prepared without unnecessary complications. I'm sure everyone has cooked duck with apples, but with apples and cabbage—well, I'm sure not everyone has tried that. For this recipe, you can use either fresh or sauerkraut cabbage. I happened to have a ready-made cabbage salad with carrots on hand, so I decided to use it. The cabbage is truly indispensable here: as the duck roasts on the cabbage bed, it absorbs its wonderful aroma. The taste turns out to be very unique and original. I highly recommend you try making duck with apples and cabbage. The dish is now ready to be served.

Prepare all the necessary ingredients. I use half a duck, which is enough for a family of three (especially with a small child). Rinse the duck thoroughly and remove any remaining feathers.

If you are using fresh cabbage, shred it with a knife or a special grater. If using sauerkraut, squeeze out the juice and rinse it. Note: using sauerkraut will give the duck a slightly tangy flavor. Place the cabbage at the bottom of a ceramic baking dish.

Place the duck on top, previously rubbed with salt and pepper. Cut the apples into small cubes and place them on the duck and around it. That's it—the active part is over. Put the duck in the oven for 1 to 1.5 hours (temperature 170°C). The cooking time depends on the size and age of the duck, as well as whether it is home-raised or store-bought. A home-raised duck takes about 30–40 minutes longer to roast—this has been tested.

During baking, baste the duck with the rendered fat every 30 minutes to keep it very juicy. The duck with apples and cabbage is ready! Serve it directly in the baking dish it was cooked in. Be sure to serve not only the meat but also the cabbage and apples—they are incredibly delicious, having absorbed the duck fat!
