
Duck with prunes

Rinse the duck thoroughly under running water, then dry it with a paper towel.

Cut into pieces. The duck is easy to portion, following the same principle as with chicken. Keep the bony parts of the duck for a flavorful soup.

Pour oil into a saucepan and sauté the duck pieces in it. Sear on both sides until a delicious golden crust forms.
