
Peking duck
Description
Roast duck is one of the most famous Beijing dishes. The bird is specially raised on farms near Beijing.

Step 1

Thoroughly wash and dry the duck. Bring water to a boil in a large pot, then immerse the duck in it for several minutes. Remove the bird and pat dry with a towel. Mix all the marinade ingredients. Coat the duck with the marinade and refrigerate for at least 12 hours.

Preheat the oven to 200°C and place the duck on a baking tray. After 20 minutes, reduce the temperature to 160°C and continue baking for another hour. Increase the temperature back to 200°C and bake for about 20 minutes, until the duck is tender. Now prepare the pancakes: Sift the flour into a bowl, add salt, mix, and pour in a spoonful of oil. Gradually add hot water while stirring, and knead the dough. Cover the dough with a cloth and let it rest in a warm place for 15 minutes. On a floured surface, divide the dough into 5 cm pieces. Brush each piece with sesame oil. Roll out the dough pieces into pancakes with a diameter of 15 cm.

Bake pancakes in a hot greased skillet. Stack the cooked pancakes.

Blend all the ingredients for the plum sauce in a blender. Remove the skin from the roasted duck, finely chop and arrange on a plate. Serve with the sauce and pancakes.
