
Crispy duck with cheese
Description
The recipe won't take much time. If you cook the duck over medium heat on a grill, the fat will easily render out, and the skin will become tender and crispy. The meat of the cooked duck will be aromatic, juicy, and delicious. Serve hot.

1. Wash the duck and pat it dry. Carefully remove any remaining feathers. Also remove large pieces of fat. Bring water to a boil, place the duck in a colander (or in the sink), and slowly pour boiling water over it for about one minute. Let it dry for about 30 minutes. Then pour boiling water over it again. Rub with salt and let sit for 30 minutes.

2. Using a small knife or needle, prick the duck skin, being careful not to damage the meat. Make about 30-40 punctures.

3. Heat vegetable oil in a small saucepan, add cayenne pepper, and warm for about 20 seconds. Remove from heat, transfer to another container, and let cool. Gradually add mustard while continuously whisking. Add ground coriander.

4. Rub the marinade all over the duck, inside and out. Refrigerate for 2 hours. Place in a preheated oven at 130 degrees Celsius. Put the duck on a rack with a baking tray underneath to catch drippings. Roast for 1.5 hours, then turn the duck over and roast for another 1.5 hours.

5. Grate the cheese on a grater, take out the duck, sprinkle with cheese, and put back in the oven for another 30 minutes.
