Duck stuffed with apples

Description

The recipe won't take much time. This duck disappears instantly from the table, leaving salads, sandwiches, and appetizers completely forgotten. And there's never enough of it! :) So feel free to choose a larger bird—you won't regret it. Wonderful side dishes for this duck include roasted potatoes, mashed potatoes, or boiled rice with vegetables. You can surround the duck with potatoes while baking—the potatoes will soak up the duck fat, apple juice, and cinnamon aroma. It will be absolutely incredible, believe me! :) So, here's how to make it. Serve hot.

    Sear the duck over a gas burner, remove any excess innards (if present), and thoroughly rinse under running water.

    Squeeze the juice from half a lemon.

    Place the duck in a large pot and pour in salted water until the whole bird is submerged. Add lemon juice, bay leaf, and a few peppercorns. Let the duck marinate in a cool, dark place for 2–3 hours.

    Wash the apples, dry them, and cut into large slices. Salt them, pepper them, and sprinkle with cinnamon.

    Cut the remaining half of the lemon into small pieces, including the peel. Mix with the apples.

    Remove the duck from the marinade and pat dry. Rub inside and outside with salted sour cream or yogurt. Fill with the apple-lemon mixture and sew up the cavity.

    Place the duck on a baking sheet lightly greased with vegetable oil and roast in a preheated oven at 180°C until cooked through (1 hour per 1 kg of weight), basting periodically with the rendered fat and juices.

    Serve the cooked duck hot. Just don't forget to remove the strings—this apple-stuffed duck is so delicious that your guests might eat them without even noticing!;)
