
Duck stuffed with pancakes
Description
There are quite a few ways to prepare duck stuffed with pancakes, as you can choose the filling to your taste: vegetable, mushroom, or even fruit, for example. You can bake the duck not only in a roasting bag, but also simply in the oven or even in a multicooker. Experiment—and you'll find your perfect dish.

1. Wash the bird, then dry it with a paper towel.

2. The most important step in stuffing the duck is removing the backbone. This must be done carefully so as not to tear the skin.

3. This is what you should end up with. Now rub the duck with salt and pepper, and if desired, use a marinade to taste or dried herbs, for example.

4. While the poultry is absorbing the flavors of the spices, prepare the pancakes. For 1 liter of milk, add 2-3 eggs, salt, a little sugar, and flour. Fry thin pancakes until golden brown.

5. Meanwhile, prepare the filling. Pour vegetable oil into a skillet. Peel and finely chop the onion. Wash, peel, and grate the carrot. Add to the skillet and sauté until cooked through. You can also add some hot sauce.

6. Carefully wrap the cooled filling in the pancakes.

7. Place the crepes into the duck as tightly as possible.

8. Sew up the bird so that the stuffing is completely inside. Use a medium needle and strong thread for this.

9. On top, you can spread the duck with mayonnaise, mustard, or tomato sauce, for example, depending on your preference.

10. Place in an oven bag and put into the preheated oven for 35–40 minutes. Then carefully cut open the bag and let the duck, stuffed with homemade pancakes, continue baking until fully cooked.
