This dish is perfect for a festive table and will delight your guests, as people usually only serve chicken drumsticks. Serve the duck with a potato side dish or a light vegetable salad. Serve hot.

Step 1

1. First, I'll prepare the duck legs: I clean each one from feathers and thoroughly rinse them, then dry with paper towels. I place the duck thighs on a baking tray, rub them with salt, and let them sit for half an hour. I wash the orange, grate its zest, peel the garlic and cut it into large pieces. I place the zest, garlic, salt, and pepper over the duck. I break the bay leaf into pieces and add it to the tray, then pour in white wine. I cover the tray with foil and bake in the oven for an hour and a half, removing the foil 15 minutes before the end.

2. Peel the oranges and separate them into segments, removing the peel and white membranes. Place granulated sugar in a frying pan and heat until completely dissolved. Add the prepared orange segments, coat them in caramel, and cook for 2 minutes. Add the zest of one orange and vinegar to the pan, and cook for another 2 minutes, then carefully transfer the oranges.

3. I transfer the duck to a plate and pour the rendered duck fat into a glass. I pour the duck fat into the skillet where I sautéed the orange, return it to the heat, and cook for several minutes. I place each duck leg onto a plate, add caramelized orange slices, and pour the prepared orange sauce over the duck.
