
with sausage and tomatoes
Description
A delicious appetizer for any gathering. The original baked treats shaped like "ears" are also called "sponges," "pockets," "ayakh," and even "smileys." The appetizer is hearty, juicy, and very tasty. It disappears from the table in an instant! You can use either boiled or smoked sausage; even ham will work. Feel free to experiment with the vegetables and replace the tomato with pickled or fresh cucumbers. In principle, the filling can be absolutely anything to your taste. Be sure to try it! You can gather the dough scraps, roll them out, and use them to make a home pizza that's just as delicious.

Prepare all ingredients. Thaw the dough in advance at room temperature.

Slice the sausage into rounds, then cut each round in half again. Slice the tomato into wedges.

Dust the work surface with flour and roll out the dough to a thickness of 3–4 mm. Using a glass or any suitable cup, cut out circles. The number of pieces should match the number of sausages.

Brush one side of each dough circle with ketchup and place the sausage on top. Then pinch the dough slightly along the sides as shown in the photo. You should end up with little "pockets" of sorts.

Transfer the prepared pieces to a baking sheet lined with parchment paper and brush the tops with egg yolk. Bake in the oven at 180–200°C for about 15–20 minutes, or until golden.

Then insert a tomato wedge into each slit in the baked puff pastries (if desired, you may salt and pepper the tomatoes to taste).

"Ushki" with sausage and tomatoes are ready. They taste good both warm and cooled.
