
Eggplant Unagi
Description
This recipe won't take much time. I'll go into more detail below. Serve the appetizer at the table.

Prepare all the ingredients.

Wash the eggplant and trim the ends on both sides.

Steam it for 10–15 minutes until tender.

Let the eggplant cool. Cut it almost in half, but not all the way through. Then make another lengthwise cut on each half and several crosswise cuts.

Heat a skillet with vegetable oil. Place the eggplant cut-side down.

Fry for a couple of minutes until golden brown, then carefully flip.

Mix all the ingredients for the sauce.

Pour in a few spoonfuls of sauce and cook for another 3–5 minutes, basting the cut side with sauce.

Then flip it over, pour in the remaining sauce, and cook for another 1–2 minutes until all the sauce thickens and most of it evaporates.

For serving, place the cooked rice on a plate. Sprinkle with thinly sliced nori.
