
Puff pastry snails with raisins
Description
For ease of preparation, we use ready-made puff pastry, but if you wish and have free time, feel free to make it yourself. The baked goods turn out very tasty and interesting, thanks to the delicious cream and raisins. You can optionally add other dried fruits, nuts, poppy seeds, etc. Serve with tea or coffee.

Step 1

1. Thaw the ready-made puff pastry at room temperature, then roll it out and set aside. Rinse the raisins and soak them in boiling water for 15–20 minutes.

2. To prepare the cream, place a saucepan with milk, 20 grams of sugar, and vanilla over heat. Bring to a boil, then cover with a lid and let it steep for 15 minutes. After the allotted time, return the milk to the heat. In another bowl, mix the egg with the remaining sugar and whisk until a white foam forms. Add starch and mix well. Gradually pour a third of the milk mixture in a thin stream into the egg mixture, stirring constantly. Then transfer everything back into the saucepan.

3. Simmer the liquid over low heat, constantly stirring with a whisk until a thick cream forms. Then transfer to a bowl, cover with plastic wrap, and chill.

4. Brush the ready dough with the resulting chilled cream, then evenly sprinkle raisins on top.

5. Roll the dough into a log and slice it into rounds about two centimeters thick, then slightly press them down with your fingers. Place the snails on parchment paper and bake in a preheated oven at 170°C for 20 minutes, until golden brown.
