Sift the flour through a sieve into a clean container and mix it with salt. Then add the egg to the flour and add water. Knead a firm and elastic dough, place it in a bag, and let it rest in the refrigerator for half an hour.

Peel and wash the potatoes. Cut them into pieces of arbitrary size and place in a pot. Pour in enough water to cover the potatoes and put on the stove. Cook for twenty minutes until done.

In a skillet, mix butter and vegetable oil. Heat them on the stove. Peel and finely dice the onion. Sauté until golden brown over medium heat.

Mash the cooked potatoes into a smooth puree. Then add half of the fried onions to it. Season with salt and pepper, and mix thoroughly. This will be your dumpling filling.

Remove the dough from the refrigerator and roll it out thinly on a work surface. Cut out equal circles using a glass. Place a spoonful of the potato and onion filling in the center of each circle.

Seal the edges of the dumplings so they don't come apart. Bring water to a boil in a saucepan and place the dumplings into it. Cook for about five minutes until fully done. Serve the dumplings with the remaining fried onions or with sour cream.
