
Boiled eel in marinade

Let's prepare the ingredients we will need. If the eel was purchased frozen, thaw it.

Peel a large onion and cut it not too finely.

Peel the carrots and cut them however you like. I cut them into rounds.

Pour the prepared onion and carrots into the pot in which we will cook the eel.

Place the eel pieces on top of the vegetables and pour in enough water to cover them by a couple of centimeters. Add the spices — salt, sugar, pepper, bay leaf, and lemon juice. If you like, you can add parsley and dill stems, but it is best to remove them afterwards. Bring to a boil and cook.

Bring to a boil and skim off any foam that forms. Continue simmering over low heat with the lid on for 30 minutes.

After the eel is cooked, cool it and transfer it to the serving dish you will bring to the table. If you do not like the taste of boiled onion and carrot, you can strain the broth and discard the vegetables you do not need. Discard the bay leaf and pepper. Now place the dish in the refrigerator to set.
