
Udmurt perepechi
Description
Goes perfectly with tea and coffee. From this amount of ingredients I got 8 perpechi. Do try making this kind of pastry using my recipe. You can serve it with tea or coffee.

Prepare all the ingredients before you start cooking. Peel and wash the potatoes right away.

In a bowl, add rye and wheat flour, add salt. Mix.

Pour in the milk, crack in the egg, add the vegetable oil and sour cream.

Knead a soft dough that does not stick to your hands, cover it with a kitchen towel, and let it rest undisturbed for 30 minutes.

Boil the potatoes until tender.

Mash the potatoes with a potato masher, then add salt, milk, and butter.

Mix everything together. The filling is ready.

Divide the dough into 8–10 pieces.

Roll each piece of dough into a round flat cake about 3 mm thick. Pinch the edges with your fingers, forming a vatrushka about 10–12 cm in diameter.

Fill the vatrushka with the potato filling, leaving room for the pour.

Prepare the pour: pour the milk into a bowl, crack in the egg, add salt, and whisk everything together with a whisk.

Place all the prepared perepechi on a parchment-lined baking sheet, pour 1–2 tbsp of the egg-and-milk mixture over each, and bake in an oven already preheated to 180°C for 20 minutes.

Serve the finished perepechi to the table immediately.
