Description
The pastry bakes simply and quickly. I added white sugar to the dough for the base and brown sugar to the pumpkin filling—this is optional. If you prefer, you can use white sugar in both the filling and the dough. In my opinion, walnuts pair beautifully with pumpkin in desserts, as does ground nutmeg, so don’t skip these ingredients—the overall flavor becomes much brighter and more interesting. You can serve it with tea or coffee.

Prepare all the necessary ingredients. The butter should be well chilled, so take it out of the refrigerator right before you start.

Peel the pumpkin, remove the seeds, cut into pieces, put in a saucepan, cover with water, and simmer over medium heat until tender.

Place all the flour into the blender bowl and add the ice-cold butter, cut into pieces.

Run the appliance for 30–40 seconds; you should end up with fine flour crumbs.
