Pumpkin syrup

Description

A fragrant and vibrant pumpkin syrup is a great alternative to jams and preserves when serving with pancakes, blinis, pancakes, croissants, and other sweet baked goods. It stores well in the refrigerator for up to a week without losing its flavor. It is not recommended to preserve this syrup for winter storage—it may ferment.

    Prepare the ingredients.

    Peel the pumpkin and remove the seeds, then rinse it in water. Cut it into slices, then into medium-sized cubes.

    Transfer the sliced pumpkin to a cauldron or saucepan with a non-stick bottom. Pour in a glass of warm water.

    Boil over medium heat for about 10-15 minutes until tender.

    Purée the softened pumpkin slices with an immersion blender. If necessary, add a little boiling water if the mixture turns out too thick. Add cinnamon sticks, sprinkle in ground cinnamon, star anise, ginger, and granulated sugar.

    Simmer for about 8–10 minutes over medium heat. Remove the star anise and cinnamon sticks.

    Pour the pumpkin syrup into a jar, cool to room temperature, and store in the refrigerator. The syrup's shelf life is 6-7 days.
