
Pumpkin pie with berries and streusel
Description
The recipe won't take much time. The specified amount of ingredients yields enough dough for two medium-sized pies. If desired, you can make one large pie or use half of the dough to prepare buns or sweet-filled pastries. For the pumpkin pie with berries and streusel, any seedless berries—fresh or frozen—work well.

Prepare all the ingredients needed to make the pumpkin pie: weigh the dry components, sift the flour, peel the pumpkin and cut it into slices, wash the berries or take them out of the freezer if using frozen ones.

Steam the pumpkin slices for 7–10 minutes (depending on the pumpkin variety), then blend them into a puree using a blender.

Pour cold milk into the pumpkin purée, and if necessary, let the mixture cool down. It should be warm but not hot, so as not to deactivate the yeast. Then add 50 grams of granulated sugar to the pumpkin-milk mixture, stir until dissolved, sprinkle in the yeast, and let it sit for 5–10 minutes until a foamy "cap" forms on the surface.

Add salt and gradually incorporate the sifted flour (2 types), reserving 100 grams of white wheat flour from the total amount for making streusel. First mix the dough with a spoon, then switch to kneading by hand.

At the end of preparing the pumpkin pie dough, add 50 grams of melted butter and knead until you get a soft, pliable dough. Cover the bowl with dough and let it rise in a warm place until it doubles or increases 2-2.5 times in volume (30-40 minutes).

While the dough is rising, prepare the streusel. To do this, combine 50 grams of granulated sugar, vanilla sugar, 100 grams of wheat flour, and 50 grams of softened butter (do not melt it). Rub the mixture with your fingers until it turns into crumbs.

After 30-40 minutes, the dough should have risen well.

Knead the prepared dough by hand and divide it into 2 parts (to make two 15 by 20 cm pies), then roll out each piece to a thickness of 1.5–2 cm. Place the rolled dough onto a greased baking sheet or one lined with a baking mat.

Spread the base with thick jam or apple puree, and sprinkle with part of the prepared streusel.

Spread the berries over the surface of the pie and sprinkle with crumbs again. Let the pie rest for 10-15 minutes, then bake in a preheated oven (190 degrees Celsius).

Bake the pie for 40-45 minutes until a golden crust forms. It can be served both hot and cold.
