
Pumpkin pie on a rice base
Description
Homemade baked goods for tea. Prepare a delicious, hearty, and healthy pumpkin pie that can replace a full dinner. Choose a small pumpkin with dense, sweet flesh for your pumpkin pie. During pumpkin season, try to make as many tasty treats as possible, and also prepare pumpkin puree for storage, which will always come in handy for baking. Serve with tea or coffee.

Wash the pumpkin, dry it, cut into large pieces, and use a tablespoon to scrape out the seed cavity. Peel off the skin and cut the flesh into cubes. Season with salt and sauté in hot oil for 5–7 minutes. Transfer the pumpkin to a plate and set aside.

Sauté the chopped onion and mushrooms in the same skillet.

Cook fluffy rice and, while still hot, mix with butter and dried thyme, then remove from the stove. Once cooled, beat in the eggs and mix well.

Line a removable baking pan with parchment paper and spread the rice in a dense layer.

Mix the fried pumpkin with the sautéed mushrooms.

Place the filling on the rice base and bake the pie in a preheated oven at 180 degrees for about 20 minutes.

After 20 minutes, brush the rice edges with sour cream, place cheese cubes on the filling, and bake the pie for another 10 minutes.
