
Pumpkin Pie
Description
Tasty baked goods for the whole family. October is when pumpkins ripen — and time to cook with them. It’s just the moment to bake a very delicious, fragrant Pumpkin Pie. Don’t be put off by the long list of ingredients: it won’t be a catastrophe if some of the fragrant spices aren’t at hand. The pie is very easy to make — follow the step-by-step recipe, and soon this wonderful dessert will be on your table. You can serve it with tea or coffee.

Prepare the ingredients.

Cut the peeled pumpkin into large pieces and bake in the oven (20–30 minutes) or in the microwave (5–7 minutes) until tender; you can add a couple of tablespoons of water so it stays juicy.

While the pumpkin is baking, prepare the dough: mix together the flour, icing sugar and a pinch of salt.

Add chilled butter, diced, to the flour. Rub everything together into fine crumbs. Work as quickly as you can so the butter stays cold and does not melt.

Make a well in the flour, pour in icy water with lemon juice.

Knead the dough, gather it into a flat disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Mix eggs, salt, sugar, cinnamon, ginger, nutmeg, cloves, lemon and orange zest, and starch.

Add cream (or full-fat sour cream) to the aromatic mixture and stir to combine.

Puree the pumpkin and add the cream and spices to the prepared mixture.

Roll out the dough into a thin sheet, line the pan with it, and shape the sides. Trimmed scraps from leveling the crust will come in handy shortly for decorating the pie. Dock the bottom with a fork.

Par-bake the pie crust for 20–25 minutes at 180°. Line it with parchment paper and fill it with pie weights (dried peas, beans).

Fill the partly baked pie crust with the filling and bake for a further 45–55 minutes at 180 °C.

Cut leaf shapes out of the leftover dough, use a toothpick to score the veins, and bake those as well.

Decorate the finished pie with baked pastry leaves, candied pumpkin, star-anise stars, or simply dust with confectioners’ sugar. Pumpkin pie should be served completely cooled. A scoop of ice cream rounds out the dessert beautifully. This pie is very tasty and fragrant—even people who dislike pumpkin will adore it.
