Description
The cooking process is not the fastest, but the result is worth the time spent. Pumpkin honey is beneficial to consume in autumn, as it serves as a preventive remedy for the immune system.

Prepare the necessary ingredients. Wash the pumpkin, peel it, remove the seeds, and weigh out 1.5 kg of clean pumpkin.

Cut the pumpkin into pieces and place them in a heavy-bottomed pot. Add honey. Mix well.

Leave for 40 minutes at room temperature.

After the specified time, juice will appear; drain it into a bowl. Place the pumpkin pot over low heat and warm it. From the moment it begins to boil, cook for 30 minutes. During cooking, juice will be released; drain it into the bowl with the juice.

Remove the resulting puree from the heat and let it cool.

Place the cooled puree onto a piece of gauze folded four times.

Squeeze out all the liquid.

Pour the obtained juice into a saucepan and simmer over heat slightly below medium for 1 hour and 30 minutes. Ten minutes before the end of cooking, add the lemon juice and complete the process.

Remove the finished pumpkin honey from heat and let it cool. Its consistency should resemble that of young bee honey—slightly viscous.

Transfer the pumpkin honey into a glass container and store in a dark place at room temperature. It is excellent as a topping for pancakes, fritters, or waffles.
