
Pumpkin semolina cake with lemon syrup
Description
The pastry is simple and quick to prepare. Since pumpkin is currently the star of the season, it's no surprise that dishes featuring it are very popular. For the cake, you can use raw grated pumpkin or pumpkin puree. The cake should be served after cooling, especially since it needs time to soak in the lemon syrup. Serve it warm or chilled. Perfect with tea.

1. Peel the pumpkin and grate finely, then transfer to a bowl.

2. Wash the lemon and grate its zest, add it to the pumpkin, along with the baking powder and vanilla sugar.

3. Pour kefir over the pumpkin, add salt, sugar (0.5 cup), and semolina.

4. Mix everything well and let it sit for 40–120 minutes, allowing the semolina to swell during this time.

5. Meanwhile, prepare the lemon syrup: mix the remaining sugar with water and lemon juice, place the mixture over heat and boil the syrup for 2 minutes.

6. Pour the swollen mannik dough into a suitable baking form. Bake in a preheated oven at 180 degrees for about 1 hour. Remove it from the oven and let it cool briefly. Pierce the cake with a thin skewer and pour the syrup over it. Let it soak for 3–5 hours.
