
Pumpkin dessert
Description
The recipe won't take much time. While the dessert mixture is hot, it won't set, which is very convenient if you don't have time to prepare the molds. The best options are glass or silicone molds. You can make the dessert without sugar by simply replacing it with honey, but agar-agar cannot be substituted—using gelatin will result in a different taste, and the dessert will only hold its shape if stored in the refrigerator. If the pumpkin is very juicy, you can slightly reduce the amount of water. Serve chilled.

Prepare the ingredients. Let's get started!

Peel the pumpkin and cut it into small pieces. Pour half of the water over it and place over heat. Cook until soft, it took me about 15 minutes.

The pumpkin is ready, some of the water has evaporated, this is normal.

Use an immersion blender to turn the pumpkin into a puree.

Add sugar, lime (or lemon) juice, and the remaining water to the pumpkin purée. Mix well.

Boil the dessert mixture for a couple of minutes so that it boils well.

Pour the hot mixture into small molds or one large mold. Candy or muffin molds work perfectly, as well as any glass dish, since jelly releases easily from glass. Leave the jelly on the table to cool. After 15-20 minutes, it will already hold its shape well, but it will take a couple of hours to cool completely.

Remove the jelly from the molds. To remove from a large mold, run a knife along the edge, then flip it onto a cutting board or a large plate. Then simply cut into pieces with a knife.
