
Pumpkin pancakes (pancakes)
Description
The recipe won't take much time. If you love pancakes but want some variety, try adding a bit of pumpkin—preferably pumpkin puree—to the batter. Serve the pancakes topped with butter, honey, or maple syrup—just make sure it's tasty and healthy. For extra flavor, I recommend adding lemon zest to the batter; you can freeze it beforehand and use as needed. Serve cooled or slightly warm.

1. Beat the egg whites with a mixer together with a pinch of salt until stiff peaks form. Mix the egg yolks with butter and sugar using a mixer until smooth.

2. Add the pumpkin purée (cooked pumpkin blended with a blender) and mix again. Add warm milk, beaten egg whites, and mix with a mixer.

3. Sift the flour and mix with cinnamon, baking powder, and vanilla sugar, then combine with lemon zest. Add the liquid ingredients to the dry ingredients and mix with a spatula.
