Pumpkin fritters

Description

The recipe won’t take much time. Pumpkin pancakes are an ideal choice for a filling, wholesome breakfast. They turn out tender, golden, and very tasty even without sugar. Take them off the pan and serve right away—they’re especially good hot. Sour cream goes perfectly with these pancakes, since pumpkin already has a fairly bold flavor and you may not need any other extras at all. I highly recommend them—the pumpkin pancakes literally melt in your mouth.

    Prepare all the ingredients according to the list. The pumpkin weight is given after peeling. You may need a little more or a little less flour, depending on how juicy the pumpkin is. If desired, you can add fresh herbs, garlic, grated cheese, or apple, cinnamon, or other spices to the batter to your taste. Every time, it turns out very tasty and completely new.

    Wash the pumpkin and cut it into wedges.

    Remove the seeds and peel the pumpkin.

    I have a pumpkin variety that is soft on its own; I simply grate it on a coarse grater, without any prior heat treatment.

    Add the egg, flour and salt to the pumpkin.

    Mix all ingredients thoroughly until you have a smooth, uniform batter. I used moderately moist pumpkin, so the batter turned out quite thick. Even so, the pancakes held their shape well and were easy to flip. If your batter is thin, add a little more flour. But don’t overdo it, or you’ll overpower the pumpkin flavor.

    Heat the pan over medium heat. Pour in the oil. Heat the oil through well too, so the pancakes don’t stick. If you’re frying them without oil, use a non-stick pan. Spoon the batter onto the pan, forming round pancakes.

    Fry the pancakes on medium heat on both sides until golden brown, two to three minutes per side. Then transfer them to paper towels to remove excess oil.

    Pumpkin pancakes are ready. Serve them right away. For a dessert-style version, sour cream works perfectly, and if you added herbs or cheese, you can make a garlic sauce to go with them.
