Description

The baking is simple and quick. For the batter, I use grated raw pumpkin, making sure to squeeze out the juice well so the cupcakes bake through properly. Vegetable oil makes the baked goods soft and tender, while cinnamon and orange zest make the pumpkin flavor barely noticeable, enhancing instead the taste of the orange glaze.     Prepare the ingredients, let's get started!

    Grate the pumpkin on a fine grater and squeeze out the juice.

    Remove the zest from the orange; 1 tablespoon is needed for the dough.

    In a small bowl, combine flour with baking powder and cinnamon.

    Place sugar and eggs into the bowl of a mixer. Beat until light and fluffy.

    Preheat the oven to 180 degrees. Place paper liners into the muffin tin. My muffin pan holds only 6 medium muffins, so I divided the remaining batter into larger molds, resulting in 6 medium and 4 large muffins. Bake the muffins in the oven for 30 minutes.

    The cupcakes are ready. Remove them from the molds and cool on a wire rack.

    Now you need to make the fondant. To do this, squeeze juice from an orange, measure out 100 ml, add sugar and starch. Place a saucepan over heat and add a piece of butter. As the juice heats up, the butter will melt, and the starch will help thicken the fondant.

    There's no need to bring it to a boil; the main thing is to thicken the fondant.
