
Pumpkin buns
Description
Perfectly pairs with tea and coffee. For the buns, you'll need boiled pumpkin and pumpkin puree—the dough made with it turns out tender and beautiful. Since my buns today are not sweet, I prepared a topping made of butter, young garlic, and parsley. Let's take a look. Serve warm or chilled. Ideal with tea.

Prepare the ingredients for the buns. Wash the pumpkin, peel off the skin, and remove the fibrous inner part, leaving only the firm center.

Cut the pumpkin into pieces, pour water over it, and boil until soft. Some of the water will evaporate during cooking—this is not a problem. The main thing is to have 150 ml of broth left; strain it from the pumpkin and let it cool down to 40 degrees.

Dissolve dry yeast and sugar in 150 ml of warm broth.

Add salt, egg, vegetable oil, and pumpkin purée. The purée can be made in several ways: using a blender, masher, or grater.

Add the sifted flour and knead a soft, pliable dough.

Cover it with plastic wrap and let it rise in a warm place for 1.5 hours.

The dough has risen, press it down with your hands. Do not use flour to prevent the dough from sticking to your hands. Just grease your hands with oil.

Divide the dough into 10-15 portions depending on the desired size of the buns. Place them on parchment paper, let rest for 15-20 minutes, then brush with egg yolk.

While the buns are resting in a warm place, you can prepare the topping. No specific proportions are needed—it all depends on your taste. Put crushed garlic, herbs, and salt into a small amount of oil. Mix well—and the topping is ready.

Bake the buns at 180 degrees for about 25-30 minutes, watch for doneness.

Pour the hot buns with the glaze; it will quickly absorb and give them a wonderful aroma! Let the buns cool in the pan.
