
Pumpkin cookies
Description
Delicious baked treat for the whole family. The pleasant combination of pumpkin with nutmeg, cinnamon, and ginger makes these cookies incredibly aromatic and tasty. They practically beg for a glass of milk... Be sure to try making pumpkin cookies—they are simply impossible not to love. Serve with tea or coffee.

Step 1

Prepare the ingredients. Peel the pumpkin and remove the fibrous inner part, wash it, and weigh out 150 g. Place it in a small pot, cover with water, and cook until soft. Use a small amount of water so the pumpkin doesn't turn into a puree. Alternatively, you can bake it or steam it.

While the pumpkin is boiling, mix the sifted flour with baking powder and spices.

As soon as the pumpkin is easily pierced with a fork, it's ready. Remove the pieces from the water, place them in a deep bowl, and mash with a fork. Add sugar and refined oil.

Combine the pumpkin mixture with the flour. I used approximately 1.5 cups in the dough and 0.5 cup for shaping the cookies.

The dough will be slightly sticky, divide it into 8 parts. Sprinkle the table with flour and roll the dough into balls. You can skip the flour and instead dip your hands in vegetable oil and roll the balls. Do it whichever way is more convenient for you.

Bake the cookies at 180 degrees for 25-30 minutes. Adjust according to your oven. I use an electric oven, and mine were ready in 20 minutes.
