
Pumpkin-Corn Muffins

If you know the proper technique for making muffin batter, everything will turn out fast and easy. And here's the method: first mix all the dry ingredients together, then add all the wet ingredients. Prepare all the necessary ingredients. You can use store-bought pumpkin puree for making muffins, or you can make homemade puree. To do this, simply boil pieces of pumpkin for 10 minutes, then drain the water and blend the pumpkin with an immersion blender. Or perhaps you have canned pumpkin puree already prepared? Then it's even easier—feel free to use it! Just keep in mind: if it's sweetened, use less sugar in the batter.

Mix all dry ingredients: wheat and corn flour, baking powder, spices, sugar, salt. Stir the mixture with a spoon.

Now add all the liquid ingredients: milk, pumpkin purée, eggs (I recommend beating them first in a small bowl—it will make them easier to combine with the other ingredients), and melted butter. Mix the batter thoroughly; a silicone spatula works very well for this. The batter should not be too runny—aim for the consistency of classic cake batter. If you're baking cupcakes for the first time, here's another reference point: the batter should be slightly thicker than 20% sour cream.

You can bake cupcakes in silicone molds or metal ones. You can place paper liners into metal molds so that the cupcakes definitely won't stick. If you don't have liners, grease the molds with butter. Divide the batter into the molds, filling about 3/4 of their volume.
