
Pumpkin with vegetables
Description
To prevent the vegetable slices from becoming too dry after baking, spray them with vegetable oil before placing them in the oven. Do not increase the temperature too high to avoid burning the side dish. Baked pumpkin is especially delicious with sour cream or mayonnaise with garlic of any fat content.

Prepare the listed ingredients. Peel the vegetables and rinse them in water.

Cut the pumpkin and potatoes into large cubes, the carrots into medium pieces, and the onion into half-rings. Mix all the vegetables in a deep container, season with salt, and drizzle with vegetable oil.

Salt and pepper the contents of the container. Optionally, you can even add some powdered dried garlic.

Add the vegetable seasoning and ground black pepper, and mix everything once again. The main thing is not to add dried spices in anything other than ground form, otherwise they will burn. Preheat the oven to 180 degrees.

Place the sliced vegetables in a baking dish with edges and bake in the oven for 25-30 minutes. There's no need to add water—the pumpkin will release juice, which the potatoes will absorb, making them juicy and delicious. If desired, you can cover the dish with foil or parchment paper.
