
Pumpkin stuffed with meat and potatoes

Dishes made from pumpkin have always been known for their uniqueness and health benefits. This vegetable is excellent for baking. Pumpkin is versatile: it can serve as a base for both desserts and main courses. In this recipe, you will learn how to deliciously prepare stuffed pumpkin while spending minimal time. 1. Prepare the pumpkins as follows: cut off the top part of each pumpkin to create small "lids." The opening should be large enough to fit a tablespoon (remember, we'll be stuffing them). Remove the seeds—they won't be needed. Scoop out the flesh with a tablespoon and finely chop it. 2. Filling: Cut the meat (beef, pork, lamb, or even chicken) into small cubes. Similarly, cut the peeled potatoes into cubes. Peel the onion and chop it finely, then sauté in vegetable oil until golden. Add the pumpkin flesh, meat, and potatoes to the onion, and sauté for another 5–7 minutes. Then add sour cream, one glass of water, salt, and spices to taste. Simmer, covered, until the potatoes are partially cooked. 3. Stuff the pumpkins with the prepared filling. Sprinkle grated cheese on top and cover with the "lids." 4. Place an oiled baking tray lined with foil into a preheated oven at 180°C (356°F). Carefully place the pumpkins on the tray and bake for 50 minutes. Before serving, garnish the dish with fresh herbs.
