
Stuffed pumpkin with chicken
Description
The recipe won't take much time. So, any pumpkin will work for stuffing. You can use cute individual mini pumpkins, larger ones cut in half lengthwise (like butternut), or big pumpkins. The latter will happily take center stage at your New Year's table or festive family dinner. I don't use spices (except for salt and pepper), but feel free to adjust according to your taste. Prepare the ingredients. Preheat the oven to 200 degrees. Let's get started!

Wash the pumpkin, cut it in half lengthwise, remove the seeds and fibrous edges. Season with salt and pepper, brush with vegetable oil, and place in a preheated oven for 40 minutes.

Peel the onion, cut the vegetables into cubes, and slice the mushrooms. Fry all the vegetables together in vegetable oil until soft.

Add chicken fillet, cut into cubes.

Fry the meat with vegetables without covering with a lid, so that the moisture evaporates. Add salt and pepper to taste.

Wash the spinach very thoroughly, remove the leaves; if they are small, leave them whole, if large — chop coarsely. Also add finely chopped garlic.

Simmer for a minute, just until the spinach wilts and the garlic releases its aroma, then remove the pan from the heat.

Meanwhile, the pumpkin is already ready. Remove part of the pumpkin with a spoon to create two boat-shaped halves.

Fill the pumpkin with the filling.

Sprinkle the grated cheese on top. Return the pumpkin to the oven, reduce the temperature to 180 degrees, and bake for 15 minutes.
