
No-bake cottage cheese cake with cookies
Description
Although this cake doesn't take just 5 minutes to prepare, it's very easy and doesn't require much skill or experience. It's best to make this no-bake cookie and cottage cheese cake in the evening and enjoy it the next morning. The gelatin is necessary to help the cake hold its shape; without it, the cake might fall apart slightly. Next, I'll show and explain step by step how to make the cake. The baking is ready. Serve at the table.

First of all, let's deal with the gelatin. Soak it in 50 grams of cold boiled water for at least 40 minutes.

While the gelatin is swelling, mash the cottage cheese together with sugar using a fork, until no large lumps remain. Then add the sour cream and mix everything with a blender.

Return to the gelatin. After the specified time, heat it in a water bath until completely dissolved, stirring constantly. Remove the gelatin from the heat and let it cool for 5 minutes. Then pour it into the sour cream and cottage cheese mixture.

Mix everything until a homogeneous mass is obtained.

Form the cake: line the mold with foil or plastic wrap. First layer - cookies. Then - the curd mixture, and again cookies.

Continue until the mold is filled, or until the ingredients run out. My last layer usually consists of cookies.

Put the cake in the refrigerator for several hours to set (ideally, leave it overnight). Then take it out and invert the mold. The cake can be decorated with fruits or eaten immediately. I preferred to drizzle it with melted chocolate.
