
Cottage cheese cake with jelly and fruits

Pour half of the milk into a small saucepan, add the gelatin to the milk.

Mix the gelatin into the milk and let it sit to swell for about 20-30 minutes.

When the gelatin swells, add the remaining milk to it. Heat the mixture over low heat until the gelatin is completely dissolved. Stir constantly, making sure the mixture does not boil. Set aside and let it cool.

Blend the cottage cheese with a blender or grind it through a meat grinder.

Add sour cream, sugar, and vanilla sugar to the cottage cheese.

And mix all this thoroughly.

Add the jelly mixture to the cooled sour cream and cottage cheese mixture, and mix well.

Prepare the fruits for the cake. Peel the orange and kiwi, then slice them into wedges. Place the canned fruits in a colander to drain off the juice. Then cut them into wedges as well. Set aside a small portion of the sliced fruits on a separate plate – these will be used to decorate the top of the cake.

Line a springform pan with plastic wrap and spread a layer of the cottage cheese mixture, then place orange slices on top. Do not add too many fruits, as the cheese may not set properly.

Place another portion of the cottage cheese mixture on the orange slices, then add pineapple slices.

Place the cottage cheese mixture on the pineapple slices, add kiwi slices, then again the cottage cheese mixture and peach slices, covering everything with the remaining cottage cheese mixture. Put the cake in the refrigerator to set.

And now it's the perfect time to prepare the fruit jelly. For this, we'll dilute a packet of store-bought jelly of any flavor you prefer. But we'll use less water than recommended—instead of 0.5 liters, as stated on my package, we'll use only 0.3 liters. Set the jelly aside to cool down. Our cake has already set, so take it out of the refrigerator and arrange the fruits, which we've reserved for decoration, beautifully over the top layer of cottage cheese. I also used some leftover berries I had in the fridge. Now, carefully pour the cooled jelly over the top and return the cake back to the refrigerator. And here's the beautiful result we'll get in the end!
