
No-bake cottage cheese cake
Description
To make a no-bake cottage cheese cake, you'll need a couple of packets of gelatin—it's the key to achieving a successful, delicate yet firm mousse texture. Use low-fat liquid cream, the kind you'd use for coffee. This cake can be made in various color variations, not just black and white. It all depends on your imagination.

The cake base will be made from crushed cookies. Grind the cookies in a blender. Melt the butter.

Mix the butter thoroughly with the crumb mixture. Line the cake pan with parchment paper (cut to the diameter of the pan). Firmly press the cookie crumbs into the pan, then place the pan in the refrigerator to set the base.

While the base is setting, prepare two cottage cheese mixtures of different colors. To do this, first dissolve the gelatin in separate bowls. While it cools, prepare the filling: blend cottage cheese, sugar, and sour cream in a blender, then divide the mixture into two equal parts (you can simply split the ingredients in half and make two different mixtures right away). Add one packet of dissolved gelatin to each half.

Melt the chocolate bar, add the cream, and mix well until smooth with no lumps.

Add the chocolate to the second half of the curd mixture, mix well, and also add the gelatin. We now have two filling mixtures.

Now take the mold out of the refrigerator and assemble the cake: place 5 tablespoons of chocolate and white cheese mixture alternately on top of each other until you run out.

When the mold is filled, use a toothpick to draw a pattern: make long lines towards the edges of the mold and create small notches towards the center, as shown in the picture. Place the cake in the refrigerator to set, preferably overnight.

To make it easier to remove the cake from the mold, gently warm the mold. For example, you can simply blow on it with a hair dryer. Serve the ready no-bake cheesecake with tea, and optionally decorate with berries.
