
Cottage cheese from frozen kefir
Description
The dish is prepared without unnecessary complications. Making cottage cheese from frozen kefir is very simple. You just need to be patient, as it will take 16–20 hours. But the refrigerator will do all the work for you. The result is a very delicious and tender dessert. The finished dessert can be served at the table.

To make cottage cheese, you will need kefir with a fat content of at least 2.5%.

Place the kefir packet in the freezer for 8–10 hours, or preferably overnight. A glass bottle of kefir may crack in the freezer. Afterwards, take out the packet and cut it open.

Break the frozen kefir into pieces so it's easier to place into a colander lined with cheesecloth, which should be set over a deep bowl or pot to collect the draining whey. Cover the kefir with a plate and place this setup in the refrigerator for 8–9 hours. If you want a denser, thicker cream cheese, cover the kefir with cheesecloth, then place a plate on top with a weight such as a jar filled with water or jam.

Afterwards, remove the cottage cheese from the cheesecloth and transfer it into a jar or onto a plate. From 900 ml of kefir, you get 200-250 grams of cottage cheese.

In addition to the cheese, you will also get 500-600 ml of excellent whey, which can be used for baking or simply drunk.

The cottage cheese made from frozen kefir is ready. Serve for breakfast or afternoon tea with honey, jam, or any baked goods.
