
Cottage cheese pie with currants
Description
1. This is a fairly simple recipe for a cottage cheese pie with blackcurrants, easy enough even for a beginner. Start by preparing the dough. Combine flour with baking powder (you can use baking soda instead) and sift it directly onto the work surface. 2. Cut the butter into small cubes and place on top of the flour. Using a knife, cut the butter into the flour until the mixture turns into fine, even crumbs. 3. Add sugar while continuing to cut the dough. 4. Beat an egg in a small bowl and add it to the flour mixture once it has become a smooth, lump-free mass. Knead the dough, then wrap and chill in the refrigerator for about 25–35 minutes. 5. Meanwhile, prepare the filling. Place cottage cheese into a deep bowl along with sour cream. Add sugar (you can also use powdered sugar in this blackcurrant cottage cheese pie recipe). Mix with a hand mixer until smooth and uniform. 6. Add an egg to the filling and blend until the cheese mixture is completely smooth. 7. Wash the berries and spread them on a paper towel to drain excess water. 8. Remove the dough from the refrigerator. Press it by hand into a heatproof baking dish, forming a crust with raised edges. 9. Spread the cottage cheese mixture over the crust, then arrange the berries on top. 10. Place the dish into a preheated oven. Bake the blackcurrant cottage cheese pie at home for about 30 minutes. Check the doneness of the crust and, if necessary, continue baking for another 5–15 minutes. Serve warm with tea or coffee.
