
Peach cottage cheese pie
Description
Perfectly pairs with tea and coffee. To make the baked goods fluffy and airy, be sure to add baking powder to the dough, or substitute it with baking soda activated with vinegar. Choose peaches that are not too juicy, so there's less liquid in the dough; otherwise, the fruit slices will sink to the bottom. Serve warm or chilled. Ideal with tea.

Prepare the listed ingredients. Choose cottage cheese that is not moist but rather dry in texture, as it will distribute evenly throughout the dough and won't sink to the bottom of the baked dish.

Break the chicken eggs into the bowl of a food processor or mixer, add salt and granulated sugar. Beat at high speed for about 3–4 minutes. The main thing is not to overbeat, so that the mixture does not separate.

Place the cottage cheese into the fluffy egg foam and stir gently, but do not whisk. Add a few drops of vanilla flavoring or sprinkle in a couple of pinches of vanilla sugar.

Add the premium wheat flour and baking powder. Gently incorporate with slow motions, slightly lifting with a whisk, but do not beat, so as not to release the air bubbles. The cottage cheese dough for the pie is now ready.

Grease the bottom and sides of a springform pan with vegetable or butter and line it with the dough. Preheat the oven to 180 degrees.

Wash two small peaches or one large fruit to remove the fuzzy layer on the surface, then dry with a paper towel. Cut in half, remove the pit, and slice. Place the slices on top of the dough, but not too many, otherwise they will sink to the bottom during baking. Put the pan on the middle rack of the oven and bake for 35–40 minutes.
