
Cheesecake with strawberry mousse
Description
Homemade treat for tea. This pie doesn't require baking. Instead of strawberry mousse, you can use raspberry, blackcurrant, blueberry, or other berry fillings. This dessert is perfect for summer days, but during colder seasons everyone will happily enjoy a piece of this berry cottage cheese pie. Serve warm or chilled. Ideal with tea.

Crush crackers (cookies) in a blender or by hand into crumbs, add soft butter and mix.

Place the crackers with butter into the pan where the pie will be made, spread them evenly on the bottom, cover with plastic wrap, and set aside while preparing the next layers.

Mix 2.5 teaspoons of gelatin with 3 tablespoons of cold water, stir and let stand until the water is completely absorbed.

Place the saucepan with gelatin over low heat and warm for 1-2 minutes without bringing to a boil.

Meanwhile, in a blender bowl, mix the cottage cheese with a cup of yogurt until smooth. Add powdered sugar and cooled gelatin, mix again, and pour over the biscuit layer in the mold. Refrigerate.

Mix the remaining gelatin with water, wait until the water is completely absorbed, then place over low heat and warm for 1–2 minutes, without bringing to a boil. Set aside to cool.

Wash the berries and remove the stems, place them in the blender bowl (reserve a few for garnish), blend into a puree, add yogurt, lemon juice, and sugar, then mix well.

Mix the strawberry purée with gelatin and pour it over the cottage cheese layer.

Place the pie in the refrigerator for several hours to set, and before serving, decorate with fresh berries.
