Instructions
- 1
Step 1

Take a small plate or bowl, mix the dry yeast with a little sugar in it, then add a small amount of warm water. Leave this mixture for a short while, until the yeast "starts working" and a foam appears on the surface.
- 2
Step 2

Now take a saucepan or a small pot, pour milk into it. You can use milk of any fat content. Heat it well on the stove, then add butter, sugar, salt, and cottage cheese to the milk. The result should be a smooth, creamy mixture.
- 3
Step 3

Now transfer the resulting milk mixture to the container where your future dough will rise. Add the activated yeast to it. Sift the flour and add half of the total amount to the container. Also add two egg yolks and mix everything thoroughly with a hook attachment using a mixer or food processor until completely smooth.
- 4
Step 4

Gradually add the remaining flour while kneading the dough. If you don't have the necessary equipment, knead the dough by hand, constantly greasing your hands with vegetable oil to prevent the dough from sticking. Let the finished dough rise in a warm, draft-free place for a couple of hours, covered with a towel.

Step 5

While the dough is rising, you have time to prepare the poppy seed filling. For this, bring water to a boil and pour boiling water over the poppy seeds three times, each time draining the water and straining the poppy seeds through cheesecloth. Then transfer the poppy seeds to a saucepan, pour in milk, and place on the stove. Cook for several minutes, stirring constantly. Remove from heat and let cool.
- 6
Step 6

When the dough rises, lightly dust the work surface with flour and place the dough on it. Knead it well and let it rise on the table for another half hour.
- 7
Step 7

To prepare the filling, take the poppy seeds and drain them in a colander. Let all the liquid drain off well so the filling doesn't become too runny. Grind the poppy seeds in a blender (or pass them through a meat grinder). Add one beaten egg white and a little honey. Mix thoroughly.
- 8
Step 8

Roll out the dough into a rectangle. Evenly spread the poppy seed filling over the entire surface. Then smooth it out and roll it up into a log.
- 9
Step 9

Take a baking dish of your choice, place the roll into it, forming it into a ring. Make cuts on it using kitchen scissors. Place a clean raw chicken egg in the center, which can later be replaced with a colored egg. Let the pie rest for about twenty minutes. Brush the surface of the pie with beaten egg (for a golden crust). Bake the pie at 180 degrees Celsius for approximately one hour.
