Easter cottage cheese kulich
Description
Perfectly pairs with tea and coffee. This amount of ingredients yields two loaves. If you have a large family, feel free to proportionally increase the ingredients by 2-3 times. I will be making loaves with raisins, but you can add candied fruits or any dried fruits. For extra aroma, in addition to vanilla, you can add orange zest. Happy baking and Happy Easter to you!
Instructions
- 1
Step 1

Prepare all the ingredients from the list. Melt the butter and let it cool slightly.
- 2
Step 2

Mix warm milk, yeast, 1 tsp sugar, and 30 g flour. I take this sugar and flour from the total amount. Stir and let it sit, covered with a towel, for 30 minutes.
- 3
Step 3

Pass the cottage cheese through a sieve.
- 4
Step 4

Rinse the raisins and dry them.
- 5
Step 5

By that time, the sponge should have noticeably increased in size.
- 6
Step 6

Add the mashed cottage cheese, eggs, sugar, melted butter, vanilla, and salt to the sponge.
- 7
Step 7

Mix and add the washed and dried raisins.
- 8
Step 8

Then add the flour in parts.
- 9
Step 9

The dough should be thick and sufficiently sticky.
- 10
Step 10

Cover the bowl with a towel and let it sit in a warm place for 1.5 hours, or until the volume doubles.
- 11
Step 11

The risen dough needs to be punched down and divided into molds, filling them halfway.
- 12
Step 12

Cover the molds with a towel and let stand for 45 minutes.
- 13
Step 13

Bake at 180 degrees for about 40-50 minutes. Check for doneness with a wooden skewer; it should come out dry.
- 14
Step 14

The cottage cheese Easter cakes are ready. Let them cool and decorate to taste.
- 15
Step 15

Happy Easter!
