Homemade pastries for tea. To make the kulich soft and fluffy, do not make the dough too dense, and let them rise well before baking. Bright, soft, and incredibly delicious kulich will delight you on the joyful holiday of Easter.

    Prepare the ingredients for the kulich. As I prepare it, I will explain in detail how much of each ingredient is used and where.

    First, prepare the starter. To do this, dissolve the yeast in warm milk, add a pinch of salt and one tablespoon of sugar. Mix well. Add 2-3 tablespoons of flour, stir and leave in a warm place for 10-15 minutes.

    Mix one cup of sugar with three eggs using a mixer, but set aside one egg white for the glaze. Separate it, cover with a lid, and refrigerate to prevent drying.

    Add the cottage cheese, vanilla sugar, and beat again with a mixer until fluffy and smooth.

    Add turmeric, orange zest, and melted but not hot butter.

    Combine the risen sponge with the whipped cottage cheese-egg mixture and mix.

    Add the flour and knead the dough. It should be sticky, but not liquid. At this stage, you can add any candied fruits, raisins, or nuts.

    Leave the dough in a warm place for 1.5–2 hours, covered with a towel.

    After two hours, the dough should triple in size. Press it down with your hands.

    Prepare the pans for baking Easter bread. You can use paper, aluminum, or non-stick molds. Grease the molds with fat. Fill them one-third full or slightly more, keeping in mind that the dough rises well. Let the loaves rest in a warm place for 20 minutes to proof, then place them in the oven to bake. Bake for 35–40 minutes at 175–180 degrees Celsius. Keep an eye on them.

    While the kulich is baking, prepare the glaze. For this, beat the chilled egg white with a mixer until stiff peaks form. Then add 100 grams of powdered sugar and two tablespoons of lemon juice. Beat again until a thick cream forms.
