
Yeast-free cottage cheese kulich, cake-style
Description
It goes perfectly with tea and coffee. For making kulich, choose dry cottage cheese, because if yours is very wet, you will need to increase the amount of flour. You can use any dried fruit you like. You can make the kulich glaze to suit your preferences. You can simply dust the kulich with confectioners’ sugar — that will be very tasty too. You can serve it with tea or coffee.

Prepare all the ingredients you need. They should all be at room temperature. Take them out one hour before you start cooking.

Purée the cottage cheese and eggs with an immersion blender until smooth. If you don’t have a blender, press the cottage cheese through a sieve, add the eggs, and mix well.

Separately, beat softened butter with sugar and vanillin using a mixer.

Combine both mixtures.

Add sifted flour, salt, and baking powder. Mix the dough with a spatula.

Soak the raisins and dried apricots in warm water for 10 minutes, then drain and pat dry. Finely chop the dried apricots. Grate the zest from the lemon. Add the dried fruit and lemon zest to the dough. Mix thoroughly.

Place the dough in a kulich or cake pan and bake at 170°C for 45–50 minutes.

Check the cake for doneness with a wooden skewer; it should come out of the batter completely dry. Cool the kulich and remove it from the pan.

I decorated it with gelatin icing, into which I added a drop of pink food coloring.

Cover the kulich with icing and leave it until set.
