Description

The dish is prepared without unnecessary complications. I used a 20 cm baking pan, and my cheesecake turned out not very tall. You can also use a 16-18 cm pan, and with the same ingredient quantities, the cheesecake will simply be taller. The ready dessert can be served.

    Break the cookies into random pieces by hand and place them in the blender bowl.

    Turn on the blender and you should end up with fine crumbs.

    Put this shortbread crumb into a large bowl and add melted butter to it.

    It's convenient to line the bottom of the cheesecake pan with parchment paper beforehand. Place all the crumb mixture onto the bottom of the pan and press it down firmly to form an even layer. Refrigerate the pan with the crust layer for 20-30 minutes to set.

    In a separate bowl, combine gelatin (15 grams) and 100 ml of water, stir and set aside to bloom. I needed 15 minutes (as indicated on my gelatin package). Pour another 10 grams of gelatin into a different bowl, add 80 ml of water, stir and set aside to bloom. Again, it took me 15 minutes.

    Place the cottage cheese, sour cream, and sugar into a separate large bowl.

    Blend these ingredients with a blender until a smooth mixture is obtained.

    Place the bowl with a large amount of gelatin into a suitable saucepan and, over the lowest heat, stir with a spatula to dissolve the swollen gelatin until it becomes liquid.

    Take the mold with the shortbread layer out of the refrigerator and carefully spread the cottage cheese mixture on top. Return the mold to the refrigerator for 1 hour. During this time, the cottage cheese layer will set.

    Squeeze 200 ml of juice from fresh oranges.

    Place a smaller amount of swollen gelatin into a saucepan and melt over low heat, stirring with a spatula until it reaches a liquid state.

    Take the mold with the future cheesecake out of the refrigerator and very carefully pour the orange layer over the cheese layer. Return the cheesecake mold back to the refrigerator to set for 1 hour.
